Cooking Wheatless Culinary Studio specializes in teaching cooking and culinary empowerment for gluten-free living. Located in the greater Seattle area, it was founded to teach gluten-sensitive, celiac, and wheat-allergic individuals to bake and cook their favorite dishes using alternate grains instead of the traditional wheat flour and wheat-based products. Baking without wheat can be a technical challenge, because wheat's gluten proteins are the prime factors responsible for the texture, structure and success of our modern bakery products. Because the American diet is very bread-centric, a person with gluten-intolerance can find it frustrating coping with a diet without wheat when eating out, and downright difficult to achieve quality results when cooking at home.

Cooking Wheatless Culinary Studio aims to help people learn to successfully utilize alternative grains and flours to make tasty baked goods, side dishes, sauces, and entrees. It's about having a good time and finding joy with food. Why should the wheat-eaters have all the fun in the kitchen?

Students will learn about alternative-grain muffins, cookies, pancakes, desserts, breads, pasta, side salads, sauces, and entrees. Yes, it can be done! Topics will also include appropriate packed lunches and snacks. Emphasis will be on understanding the food science behind the special techniques and ingredients.

Recipes will focus mostly on whole-grain-based or flour-based recipes because these are the most difficult to "replace" in the gluten free diet and can be greatly missed from an emotional point of view, not to mention needed for adequate nutrition of complex-carbohydrates and vitamins & minerals.

However, since "whole foods" cooking is the guiding principle at the basis of our cooking, some vegetarian or natural meat recipes may be included because they are so satisfying that one may forget that wheat or grains were a revered part of one's old diet...(and eating lots of dark leafy greens, red and purple fruits, and omega-3 fish, is essential to a healthy diet, no matter who you are).
